Domaine Billaud-Simon Chablis 2020

Charles Louis Noel Billaud returned home to Chablis at the end of the Napoleonic wars in 1815 and founded Domaine Billaud-Simon. The estate was purchased by Domaine Faiveley in 2014 but still operates with its own vineyard and facilities. This has a ton of complexity and texture, with layers of peach, citrus, and crushed rock. Sustainable.
