David Trousselle is a tiny producer in the Hautes Cotes de Beaune, that only produces single-vineyard Pinot Noir and Chardonnay. While this appellation is quite vast, his vineyards are extremely well located, nestled in a valley between St Aubin and St Romain. Coteaux Bourguignons is 100% Gamay from vines planted in 1970. Grapes are hand-harvested, de-stemmed, and sees a 15-day fermentation/maceration with very gentle extraction. The wine is aged for 12 months in oak. Simply beauiful.
